Other applications of soy lecithin
The most important chemical characteristic of lecithin is its emulsifying power. Phospholipid molecules possess a polar, hydrophilic part and a nonpolar, lipophilic part, responsible for reducing the interfacial tension between mixtures such as oil and water. This emulsifying power is used in applications such as beverages, margarine, cheeses, yogurts, dressings, and so on , allowing the production of oil-in-water or water-in-oil emulsions.
