The black truffle returns to its roots to tell its own story. This week marks the start of a gastronomic miniseries that unites the rural landscape of Graus with the cuisine of Barbastro in a real and emotional journey showing how the so-called "black diamond" goes from the earth to the plate.
The initiative, spearheaded by Sentidos Truferos in collaboration with the restaurant La Oveja Negra , is structured in four chapters and will premiere with a teaser this Sunday. The first two installments will be released next week, and the remaining two the following week. The aim is not only to showcase a product, but also to celebrate a culinary culture deeply rooted in the region.
The origin: winter, earth, and patience
The star of the show is Tuber melanosporum , the black winter truffle that matures underground during the coldest months, between November and March. In areas like Graus, where truffle hunting is an integral part of the landscape and the rural economy, its cultivation and harvesting require knowledge, respect for the natural cycle, and patient waiting until it reaches its optimal point of ripeness.
Aragon is one of the main black truffle producing territories in Spain , and regions such as Ribagorza and Somontano have consolidated an identity linked to this underground fungus that arouses expectation every winter in markets and gastronomic events.
