This week we have a riddle for you: Tender and crunchy, it's the only one of its kind with a Protected Designation of Origin, it's not spicy, and it doesn't make you cry when you cut it. What product are we talking about?
Indeed, it is the Fuentes de Ebro PDO onion , a unique and ancient variety, since it has been cultivated since the 11th century along the banks of the Ginel and Ebro rivers, in the municipalities of Fuentes de Ebro, Mediana de Aragón, Osera de Ebro, Pina de Ebro, Quinto and Villafranca de Ebro.
The steppe microclimate, windy and with little rainfall, along with the fertile soil rich in gypsum and calcium carbonate, provide the ideal conditions for its cultivation.
Harvesting begins in mid-July and continues until December. During this period, both sweet onions, known as spring onions, are available from June onwards, and dry onions from July onwards. Outside of these months, they are impossible to find in the market.
The Fuentes de Ebro PDO was created at the end of 2010 and registered in the Register of Protected Designations of Origin of the European Commission in 2013. This season they expect to harvest 3 million kilos, 20% more than in previous years.
The Fuentes de Ebro Protected Designation of Origin onion is characterized by its straw-white exterior, white inner layers, and a tender, crisp, and very juicy texture with a high water content. Extremely healthy, it contains only 26 kilocalories per 100 grams.
Furthermore, it is rich in minerals such as calcium, magnesium, iron, phosphorus, iodine, potassium, and sulfur, and in vitamins A, B, C, and E. Its caloric content is only 26 kcal per 100 grams. Due to its low sulfur content, it is known for not causing tears when cut.
In the kitchen, it is exceptional for enjoying in salads and caramelizes without the need to add sugar due to its natural sweetness.
